Watermelon & feta salad with ouzo dressing


Ingredients (serves 4)

  • 1/4 (about 1.3kg) seedless watermelon, rind removed, cut into thin wedges
  • 1 cup fresh mint leaves
  • 1/2 red onion, cut into thin wedges
  • 50g reduced-fat feta (Clover Creek brand), thinly sliced
  • Ouzo dressing

  • 2 tbs red wine vinegar
  • 2 tbs olive oil
  • 1 tbs ouzo
  • Salt & freshly ground black pepper
  1. To make the ouzo dressing, whisk together the vinegar, oil and ouzo in a medium jug. Taste and season with salt and pepper.
  2. Arrange watermelon, mint, onion and feta on serving plates. Drizzle with ouzo dressing and serve immediately.
